Onion Top Pesto

Ingredients
- 3 cups onion tops greens, or any green leafy herb
- 3⁄4 cup parmesan cheese
- 1⁄2 cup toasted walnuts
- 1 tablespoon lemon juice
- zest of one lemon
- 3⁄4 cup olive oil
- salt and pepper to taste
Directions
- Place onion tops, Parmesan cheese, nuts, lemon juice, and zest in a food processor.
- While the food processor is running and slowly add oil until desired texture is reached.
- Taste and adjust salt and pepper as needed.
