Hot Honey Roasted Sweet Potatoes

Ingredients
- 3 pounds sweet potato, peeled and sliced very thin
- 1⁄4 cup butter
- 1 tablespoon oil
- 1 1⁄2 tablespoons fresh minced garlic
- 3 tablespoons honey
- 1⁄2 teaspoon dried basil
- 1.5 teaspoons red pepper flakes, or to taste
- 1 teaspoon salt and pepper, or to taste
- 2 tablespoons fresh parsley or green onions, chopped for garnish
Directions
Preheat your oven to 400°F and lightly grease a 9x13-inch baking dish.
- Prepare the Honey Mixture: In a large microwave-safe bowl, combine the butter, oil, minced garlic, honey, dried basil, red pepper flakes, salt, and black pepper. Microwave for about 1 minute, or until the butter is fully melted. Stir well to blend the flavors together.
- Coat the Sweet Potatoes: Add the sliced sweet potatoes to the bowl, tossing well to make sure each slice is fully coated with the honey garlic mixture.
- Arrange in Baking Dish: Stack the coated sweet potatoes together and line them upright in rows along the length of the greased baking dish.
- Bake in Two Stages: Cover the dish with foil and bake for 20-30 minutes. Then, remove the foil and continue baking for an additional 20-30 minutes, or until the sweet potatoes are soft when pierced with a fork and the edges are golden and crispy. (Baking times may vary depending on the thickness of the slices.)
- Garnish and Serve: Once done, remove the dish from the oven and sprinkle with fresh parsley or green onions for a burst of color and flavor. Serve warm and enjoy!
