Hot Honey Roasted Sweet Potatoes

Ingredients
- 3 pounds sweet potato, peeled and sliced very thin
- 1⁄4 cup butter
- 1 tablespoon oil
- 1 1⁄2 tablespoons fresh minced garlic
- 3 tablespoons honey
- 1⁄2 teaspoon dried basil
- 1.5 teaspoons red pepper flakes, or to taste
- 1 teaspoon salt and pepper, or to taste
- 2 tablespoons fresh parsley or green onions, chopped for garnish
Directions
Preheat your oven to 400°F and lightly grease a 9x13-inch baking dish.
- Prepare the Honey Mixture: In a large microwave-safe bowl, combine the butter, oil, minced garlic, honey, dried basil, red pepper flakes, salt, and black pepper. Microwave for about 1 minute, or until the butter is fully melted. Stir well to blend the flavors together.
