Greek Chicken Marinade

Ingredients
- 2 pounds chicken breast or thighs
- 1⁄2 cup olive oil
- 5 garlic cloves, minced
- 1⁄2 cup fresh lemon juice
- 2 lemons, zested
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1⁄2 teaspoon dried rosemary
- 1 tablespoon dried parsley
- 1 teaspoon black pepper
- 1 teaspoon non-iodized salt
Directions
- Pre-heat oven to 400.
- Place chicken and all marinade ingredients into a zip lock bag.
- Marinate for 3-4 hours.
- Place chicken and sauce into a 9 by 13-inch Pyrex dish.
- Bake until chicken thighs are easily shreddable with two forks—about 30-40 minutes.
- Serve as a main dish or salad topping.
