Greek Chicken Marinade

This is a very easy recipe to whip up. You will love this served as a main dish or as a topping on your favorite salad! The lemon and herbs are the perfect balance to bring this chicken to the next level. It’s excellent on the grill, instant pot, oven, or in the slow cooker!
Ingredients
- 2 pounds chicken breast or thighs
- 1⁄2 cup olive oil
- 5 garlic cloves, minced
- 1⁄2 cup fresh lemon juice
- 2 lemons, zested
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1⁄2 teaspoon dried rosemary
- 1 tablespoon dried parsley
- 1 teaspoon black pepper
- 1 teaspoon non-iodized salt
Directions
- Pre-heat oven to 400.
- Place chicken and all marinade ingredients into a zip lock bag.
- Marinate for 3-4 hours.
- Place chicken and sauce into a 9 by 13-inch Pyrex dish.
- Bake until chicken thighs are easily shreddable with two forks—about 30-40 minutes.
- Serve as a main dish or salad topping.
