Cheesy Potatoes (AKA Funeral Potatoes)

Ingredients
- 30 ounces frozen hash browns, diced or shredded, thawed
- 1⁄2 cup butter, melted
- 3 tablespoons dried minced onions
- 2 cups sour cream
- 10.5 ounces cream of chicken soup
- 4 cups shredded cheddar cheese
- 2 cups corn flakes cereal or potato chips, crushed
- salt and pepper, to taste
Directions
Preheat your oven to 350°F and grease a 9x13” baking dish.
- In a large mixing bowl, combine the thawed hash browns, melted butter, dried minced onions, sour cream, cream of chicken soup, shredded cheddar cheese, and a generous pinch of salt and pepper. Stir everything together until it’s creamy and well mixed.
- Spread the cheesy potato mixture evenly into the prepared baking dish.
- Sprinkle the crushed cornflakes or potato chips over the top to create that irresistible crunchy topping.
- Slide the dish into the oven and bake for 40-45 minutes, or until the edges are bubbling and the top is beautifully golden brown.
- Let the casserole cool for a few minutes before serving, if you can wait that long! Serve warm and enjoy the comforting, cheesy goodness.
