Street Corn Salsa

This corn salsa will be loved by your whole family! It is so good as a taco topper or just with corn chips!
Ingredients
- 1 pound frozen corn, thawed and drained
- 2 tablespoons olive oil
- 1⁄2 red onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon black pepper
- 1 teaspoon non-iodized salt
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon coriander
- 1 lemon, juiced
- 1 cilantro, chopped
- 1 avocado, diced
Directions
Pre-heat oven to 400
- Place corn, onions, salt, pepper, coriander, cumin, and oil on a baking sheet. Mix to combine.
- Bake in the oven for 15-20 minutes or until corn is browned.
- Place corn mixture in a bowl and add lemon juice, cilantro, and avocado. Mix to combine.
- Enjoy over tacos or with chips!
