Ingredients
- 3-4 pounds Beef Roast , cut into 2 inch cubes
- 1 poblano peppers, stem removed
- 1 red onions, skins removed
- salt and pepper, to taste
- 1 teaspoon chipotle powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 10 fresh garlic cloves
- 2 cups salsa verde
- 1 fresh lemons
Directions
- Place the beef, pepper, onions, and garlic at the bottom of the slow cooker. Season generously with salt, pepper, chipotle powder, cumin, and coriander, then mix to evenly coat the ingredients.
- Pour the salsa verde over the mixture, ensuring everything is well covered. Squeeze the juice of one lemon over the top.
