Renee's Christmas Breakfast Casserole
This has been a Christmas morning favorite for many years! It's easy to make the night before and is perfectly paired with cinnamon rolls.
Ingredients
- 1 pound Jimmy Dean's sausage (or bacon), Cooked (and crumbled if bacon)
- 6 slices rustic loaf of bread, cubed
- 1 cup cheddar cheese, shredded
- 8 large eggs
- 2 cups whole milk
- 1 teaspoon mustard powder
- 4 ounces canned diced green chiles
- 1⁄2 teaspoon salt and pepper
Directions
Preparation (the night before baking)
- Grease a 9x13-inch baking dish and set aside.
- In a large bowl, mix together the cheese, eggs, milk, mustard powder, green chiles, salt, and pepper.
- Add the bread and sausage or bacon and mix until well combined. Pour into the prepared baking dish.
- Cover the baking dish with plastic wrap and refrigerate overnight.
Baking the casserole
- Preheat the oven to 350°F (163°C).
- Remove the casserole from the refrigerator and let it sit at room temperature for about 15-20 minutes.
- Bake covered in the preheated oven for 30-35 minutes and then uncover and bake for an additional 10-15 (or until the center is set and the top is golden brown).
- Allow the casserole to rest for a few minutes before serving.

Notes
Optional: Garnish with fresh herbs like parsley, cilantro, or chives for added freshness, and top with sour cream and/or salsa.
