Peanut Butter Chocolate Ice Cream Sandwiches

Ditch the cake and bring on the ice cream sandwiches! If you are in need of a summer birthday treat look no further! These are the perfect marriage of chocolate peanut butter and ice cream goodness!
Ingredients
- 1 cup butter, softened
- 1 teaspoon vanilla
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 cup creamy peanut butter
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1⁄8 teaspoon salt
- 1⁄2 gallon chocolate ice cream
Directions
Preheat oven to 375F
- In a stand mixer, place butter and vanilla into the mixing bowl, beat on medium for 2 minutes; Mixture should look light and fluffy.
- Gradually add white and brown sugar while the mixer is on
- Add eggs, one at a time, beating mixture after each egg is added until fully incorporated
- Add flour, baking powder, and salt on low until just combined
- Using a 1-inch cooking scoop, scoop cooking dough onto cooking sheet, flatten the dough
- Bake for 9 minutes or until just golden around the edges, be careful not to over bake
- Let cookies cool completely
- Remove the cardboard from around the ice cream, slice ice cream lengthwise into 1-inch slices
- Working quickly, use biscuits cutters to cut ice cream into rounds, capping the top and bottom with the underside of two cookies. Slightly press together.
- Repeat until all cookies are made into ice cream sandwiches
- Place in freezer for 4-6 hours or until ice cream is fully frozen
