This dish works perfectly as a freezer meal.
Ingredients
- 2 pounds flank steak
- 1 bunch cilantro
- 3 limes, juiced
- 3 green onions
- 2 fresh jalapeños, deseeded
- 3 garlic cloves, peeled
- 3 tomatillos, outer paper removed
- 1⁄4 cup oil
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon salt
Directions
- In a blender add all the marinated ingredients and blend until smooth.
- Pour marinate over meat and fully coat all the meat with the marinade. Marinate for 2-24 hours.
Cooking Directions
Grill: Preheat your grill to 400 degrees Fahrenheit. Oil the grill grates well. Add the steak to the grill, and cook for 3-4 minutes per side or until the internal temperature reaches 135 Fahrenheit. Allow the steak to rest for 5-10 minutes before slicing thinly against the grain.
Notes
How to Freeze: Add the steak and marinade to a gallon-sized freezer ziplock bag. Remove as much air as you can, then seal the bag. Flatten the bag so the chicken is in a single layer. Place in the freezer and use it within 3-4 months for best results.
How to Defrost: Place the chicken on a plate in the refrigerator overnight and then cook with your preferred cooking method, see above.
