Chocolate Chip Ice Cream Sandwiches

Ditch the cake and bring on the ice cream sandwiches! If you are in need of a summer birthday treat look no further! These are the classic chocolate chip ice cream sandwiches!


Ingredients

  • 2 14 cups all-purpose flour 
  • 1 teaspoon baking soda
  • 1 teaspoon salt 
  • 1 cup butter, softened
  • 34 cup granulated white sugar
  • 34 cup brown sugar, packed
  • 1 teaspoon vanilla extract 
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
  • 1 cup nuts, chopped (optional)
  • 12 gallon vanilla ice cream

Directions

Preheat oven to 375

  1. In a stand mixer, place butter and vanilla into the mixing bowl, beat on medium for 2 minutes, mixture should look light and fluffy
  2. Gradually add white and brown sugar while the mixer is on
  3. Add eggs, beating the mixture after each egg is added until fully incorporated
  4. Add flour, baking powder, and salt on low until just combined
  5. Stir in chocolate chips and nuts
  6. Using a 1-inch cooking scoop, scoop cooking dough onto cooking sheet, flatten the dough
  7. Bake for 9 minutes or until just golden around the edges, be careful not to over bake
  8. Let cookies cool completely
  9. Remove the cardboard from around the ice cream, slice ice cream lengthwise into 1-inch slices
  10. Working quickly, use biscuits cutters to cut ice cream into rounds, capping the top and bottom with the underside of two cookies. Slightly press together.
  11. Repeat until all cookies are made into ice cream sandwiches
  12. Place in freezer for 4-6 hours or until ice cream is fully frozen
  13. Enjoy!!
