Chocolate Chip Ice Cream Sandwiches

Ditch the cake and bring on the ice cream sandwiches! If you are in need of a summer birthday treat look no further! These are the classic chocolate chip ice cream sandwiches!
Ingredients
- 2 1⁄4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, softened
- 3⁄4 cup granulated white sugar
- 3⁄4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups semi-sweet chocolate chips
- 1 cup nuts, chopped (optional)
- 1⁄2 gallon vanilla ice cream
Directions
Preheat oven to 375
- In a stand mixer, place butter and vanilla into the mixing bowl, beat on medium for 2 minutes, mixture should look light and fluffy
- Gradually add white and brown sugar while the mixer is on
- Add eggs, beating the mixture after each egg is added until fully incorporated
- Add flour, baking powder, and salt on low until just combined
- Stir in chocolate chips and nuts
- Using a 1-inch cooking scoop, scoop cooking dough onto cooking sheet, flatten the dough
- Bake for 9 minutes or until just golden around the edges, be careful not to over bake
- Let cookies cool completely
- Remove the cardboard from around the ice cream, slice ice cream lengthwise into 1-inch slices
- Working quickly, use biscuits cutters to cut ice cream into rounds, capping the top and bottom with the underside of two cookies. Slightly press together.
- Repeat until all cookies are made into ice cream sandwiches
- Place in freezer for 4-6 hours or until ice cream is fully frozen
