Breakfast Sausage and Corn Muffins

Ingredients
- 2⁄3 cup butter
- 1 cup sugar
- 3 eggs
- 1 2⁄3 cups milk
- 2 1⁄3 cups all-purpose flour
- 1 cup cornmeal
- 4 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup shredded sharp cheddar cheese
- 1⁄2 pound breakfast sausage crumbles, cooked
Directions
Preheat oven to 400 degrees | Grease 24 muffin tin or line with muffin liners
- In a mixing bowl, mix flour, cornmeal, baking powder, and salt and set aside.
- In a stand mixer, cream together butter and sugar until lightly fluffy.
- Beat in eggs one at a time. Then add the dry mixture and milk alternately until just combined. Fold in cheddar cheese and sausage.
- Pour batter into 24 muffin tins
- Bake for 15-20 minutes or until golden brown and the toothpick comes out clean.
- Allow to cool and enjoy!
