Apple Coffee Cake

Ingredients
Cake Batter
- 2 1⁄2 cups all-purpose flour
- 2 teaspoons baking powder
- 3⁄4 teaspoon baking soda
- 2 teaspoons cinnamon
- 1⁄2 teaspoon ginger
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon allspice
- 1 teaspoon salt
- 1 cup neutral flavored oil
- 1 cup white sugar
- 1⁄2 cup brown sugar
- 1 tablespoon vanilla
- 4 large eggs
- 1⁄2 cup apple sauce
- 3 cups apples, shredded or finely diced
Crumble Topping (Optional)
- 1⁄2 cup butter, softened
- 1⁄2 cup brown sugar
- 1⁄2 cup flour
- 1⁄2 cup rolled oats
Directions
Preheat the oven to 350˚F. In a 9 by 13 inch baking pan spray with non-stick cooking spray
Crumble Topping
- In a small bowl, add all the crumble ingredients and mix to combine.
Cake
- In a large bowl combine dry ingredients and mix to combine, set aside.
- Mix together oil, white sugar, brown sugar, eggs, and vanilla until thoroughly combined.
- Add dry ingredients to the wet ingredients and mix until just combined. Fold in apples.
- Pour batter into the prepared baking pan and top with crumble topping. Bake for 40-50 minutes or until a toothpick comes out clean.
- Allow the cake to cool before cutting into it to enjoy.
