This corn salsa will be loved by your whole family! It is so good as a taco topper or with corn chips!
Ingredients
Salad fixings
- 12 ounces frozen corn, thawed and drained
- 2 cans black beans, drained and rinsed
- 12 ounces cherry tomatoes, chopped
- 1⁄2 red onion, finely diced
- 1⁄2 red onion, finely diced
- 1⁄2 red bell pepper, finely diced
- 1 jalapeño, finely diced
- 2 avocados, diced
- 1 bunch cilantro, chopped
- 1 bunch green onions, chopped
Dressing
- 2 tablespoons honey
- 3 lemons, juiced
- 1⁄4 cup olive oil
- 3 garlic cloves, crushed
- 2 teaspoons cumin
- 2 teaspoons smoked paprika
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon red pepper flakes, crushed (optional)
- salt and pepper, to taste
Directions
- In a large bowl add all the salad fixing and mix to combine.
- In another bowl, mix together all the dressing ingredients and pour over the salad. Toss salad until everything is well coated.
- Enjoy over tacos or with chips.
