Homemade pizza sauce is so amazing! You will love having it sitting on your pantry shelves for an easy homemade dinner!
Ingredients
- 26 cups tomato, peeled, puree
- 1 cup lemon juice
- 2 tablespoons dried oregano
- 2 tablespoons dried basil
- 1 tablespoon black pepper
- 1 tablespoon salt
- 1 head of garlic
Directions
- Add all your ingredients to a large roaster pan and cook down for 5-6 (longer if it needs to be thicker) hours at 350 degrees.
- Used a hand blender to blend the sauce until smooth.
- Fill pint jars and leave 1/2 inch headspace.
- Wipe down the rim of each jar.
- Place a new canning lid and screw on a ring.
- Place in a water bath canner and boil for 35 min.
- Turn heat off and let jars cool in water bath canner for 5 minutes.
- Remove jars from the canner and set them on a clean kitchen towel for 24 hours.
- Once cool, remove rings, wipe down jars, and put in the pantry to enjoy whenever. Keeps for 18 months.
Notes
The recipe makes about 8 pints.
- 18 pounds of plum tomatoes makes about 26 cups of puree.
- The type of tomatoes you use can greatly affect the cooking time. Plum tomatoes will cook down much faster whereas slicing tomatoes will take longer.
- If you only use plum tomatoes, you may need to add 1/2-1 cup of water to the roaster to start the cooking process.
